Quick and Easy Burrito Bowls by Foodbyfranchi
Seasoned ground beef served over fluffy rice with hearty black beans and sweet golden corn kernels.

Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning
- 1/2 cup water
- 3 cup cooked rice
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can corn, drained
- 1/2 cup salsa
- 1 medium avocado, diced
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- 1 cup shredded cheddar or mexican cheese blend
Instructions
- Brown the ground beef in a large skillet over medium-high heat for 5-7 minutes, breaking it apart with a spoon, until fully cooked. Drain any excess grease from the skillet.
- Add the diced onion and minced garlic to the skillet with the cooked beef. Sauté for 3-5 minutes, stirring occasionally, until the onion softens and becomes translucent.
- Stir in the taco seasoning and 1/2 cup of water. Bring the mixture to a simmer, then reduce heat to low and let it simmer for 3-5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- While the beef simmers, prepare your bowls. Divide the cooked rice evenly among 4 serving bowls.
- Top the rice with the seasoned ground beef mixture, rinsed black beans, and drained corn.
- Finish each bowl with a spoonful of salsa, diced avocado, a dollop of sour cream, a sprinkle of fresh cilantro, and shredded cheese. Serve immediately with lime wedges.
