Quick and Easy Burrito Bowls by Foodbyfranchi

Seasoned ground beef served over fluffy rice with hearty black beans and sweet golden corn kernels.

Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 3 cup cooked rice
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can corn, drained
  • 1/2 cup salsa
  • 1 medium avocado, diced
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • 1 cup shredded cheddar or mexican cheese blend

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat for 5-7 minutes, breaking it apart with a spoon, until fully cooked. Drain any excess grease from the skillet.
  2. Add the diced onion and minced garlic to the skillet with the cooked beef. Sauté for 3-5 minutes, stirring occasionally, until the onion softens and becomes translucent.
  3. Stir in the taco seasoning and 1/2 cup of water. Bring the mixture to a simmer, then reduce heat to low and let it simmer for 3-5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  4. While the beef simmers, prepare your bowls. Divide the cooked rice evenly among 4 serving bowls.
  5. Top the rice with the seasoned ground beef mixture, rinsed black beans, and drained corn.
  6. Finish each bowl with a spoonful of salsa, diced avocado, a dollop of sour cream, a sprinkle of fresh cilantro, and shredded cheese. Serve immediately with lime wedges.
