Ingredients
- 3-4 ripe round tomatoes, sliced
- 500g (1 lb) fresh mozzarella, sliced
- 8-10 fresh basil leaves
- 1/4 cup extra virgin olive oil (for basil oil, plus more for drizzling)
- 1/2 tsp salt (to taste)
Instructions
- Slice the tomatoes and fresh mozzarella into even rounds.
- Arrange the tomato and mozzarella slices on a serving plate, alternating them in a layered pattern. Continue until the plate is filled.
- In a small glass or jar, combine the fresh basil leaves with about 1/4 cup of extra virgin olive oil.
- Blend the basil and olive oil mixture using an immersion blender or a small food processor until smooth and fragrant. Add more olive oil if needed to reach a pourable consistency.
- Season the assembled salad lightly with salt.
- Gently pour the basil-infused olive oil over the layered tomatoes and mozzarella.
- Serve immediately and enjoy the enhanced flavors.
