Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup all-purpose flour (for crumble)
  • 1/4 cup brown sugar (for crumble)
  • 1 tsp ground cinnamon (for crumble)
  • 2 tbsp cold unsalted butter, cubed (for crumble)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Whisk together mashed bananas, melted butter, sugar, egg, and vanilla extract in a large bowl until smooth.
  3. Fold in the flour, baking soda, and salt until just combined, being careful not to overmix.
  4. Prepare the crumble by mixing flour, brown sugar, and cinnamon in a small bowl, then cutting in cold butter until crumbly.
  5. Pour the batter into the prepared loaf pan and sprinkle the cinnamon crumble evenly over the top until ready to serve.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
