Spicy Tomato Pasta by Flavorsnlife

Linguine tossed in a spicy tomato sauce with wilted baby spinach and a rich cream finish.

Ingredients
- 2 tbsp olive oil
- 1 small onion, diced
- 4 cloves garlic, minced
- 2 cup cherry tomatoes
- 1/2 tsp salt, to taste
- 1/2 tsp black pepper, to taste
- 1 tsp italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 2 tbsp tomato paste
- 3/4 cup heavy cream
- 1 cup baby spinach
- 8 oz (225g) linguine pasta, cooked
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced onions and sauté for 5-7 minutes until they are translucent and softened.
- Add the minced garlic to the skillet and cook for 30-60 seconds until fragrant, being careful not to burn it.
- Stir in the cherry tomatoes, salt, black pepper, Italian seasoning, garlic powder, onion powder, and tomato paste. Cook for 8-10 minutes, stirring occasionally, until the cherry tomatoes burst and release their juices.
- Reduce the heat to low. Pour in the heavy cream and add the baby spinach. Simmer gently for 2-3 minutes, stirring, until the spinach begins to wilt.
- Add the cooked linguine pasta to the skillet. Toss everything together until the pasta is evenly coated with the spicy tomato sauce and the spinach is fully wilted. Serve immediately.
