Sausage-filled tortellini tossed in a savory tomato paste sauce with softened blistered cherry tomatoes and onion.

Ingredients
- 9 oz sausage tortellini
- 2 tbsp olive oil
- 1 small onion, chopped
- 5 garlic cloves, minced
- 1 cup cherry tomatoes, halved
- 1 tbsp tomato paste
Instructions
- Bring a large pot of salted water to a boil. Add the 9 oz sausage tortellini and cook according to package directions, typically 2-3 minutes, until al dente. Drain well, reserving about 1/2 cup of pasta water, then set aside.
- In a large skillet or pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped small onion and sauté for 3-5 minutes until softened and translucent.
- Stir in the 5 minced garlic cloves and cook for another 1 minute until fragrant, being careful not to burn. Add the 1 cup of halved cherry tomatoes and the 1 tbsp tomato paste, then cook for 5-7 minutes, stirring occasionally, until the tomatoes begin to burst and soften, forming a light sauce.
- Add the cooked tortellini to the skillet with the tomato mixture. Toss gently to combine, adding a splash or two of the reserved pasta water if the sauce seems too thick, until everything is well coated and heated through, about 1-2 minutes.
- Serve immediately, optionally garnished with fresh basil or grated Parmesan cheese.
