Roasted Tomato Burrata Dip by Flavorsnlife

Roasted cherry tomatoes and garlic cloves served with creamy burrata and a hint of spicy jalapeño.

Ingredients

  • 4 tbsp olive oil
  • 2 cup cherry tomatoes
  • 8 garlic cloves, crushed
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 jalapeño pepper, sliced and deseeded
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz burrata cheese
  • 1/2 tsp red chili flakes
  • 1 small baguette, sliced

Instructions

  1. Preheat your oven to 450ºF (230°C).
  2. In a cast iron or other oven-safe pan, heat the olive oil over medium heat for 2-3 minutes until shimmering.
  3. Add the cherry tomatoes, crushed garlic cloves, sliced jalapeño pepper, salt, thyme, oregano, and black pepper to the pan. Toss with a wooden spoon to mix and coat the tomatoes evenly
  4. Transfer the pan to the preheated oven and bake for 10-12 minutes, or until the tomatoes begin to burst open and soften.
  5. Remove the pan from the oven and let it cool slightly for about 5 minutes.
  6. Carefully place the burrata cheese on top of the warm roasted tomatoes.
  7. Garnish with red chili flakes and serve immediately with sliced baguette.
