Ingredients

  • 8 oz linguine
  • 4 tbsp olive oil
  • 12 oz cherry tomatoes, cut in half
  • 1 small onion, diced
  • 5 cloves garlic, minced
  • 1 cup spinach
  • 1 tsp italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp red chili flakes
  • 4 cup boiling water or chicken broth
  • 1/4 cup grated parmesan cheese (optional)
  • 2 tbsp fresh basil, chopped (for garnish)

Instructions

  1. In a large skillet, combine the olive oil, halved cherry tomatoes, minced garlic, diced onion, spinach, Italian seasoning, paprika, salt, pepper, and red chili flakes. Add the linguine to the skillet, ensuring it is nestled amongst the other ingredients.
  2. Pour the boiling water or chicken broth into the pan. Bring to a boil, then reduce heat to medium-high and cook for 10-15 minutes, stirring occasionally, until the liquid has mostly evaporated and the pasta is al dente.
  3. Remove the skillet from heat. If desired, stir in the grated Parmesan cheese until melted and creamy. Garnish generously with fresh chopped basil before serving immediately.
