Baked Feta and Cherry Tomatoes made with cherry tomatoes, feta cheese and dried thyme.

Ingredients

  • 2 cup cherry tomatoes
  • 4 tbsp olive oil
  • 1 block feta cheese, drained and cut into 4 pieces
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 6 cloves garlic, crushed and sliced
  • 1/2 tsp red chili flakes
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a cast iron or other oven-safe pan, combine the cherry tomatoes, garlic cloves, olive oil, dried thyme, dried oregano, paprika, salt, and black pepper. Toss everything together thoroughly with a wooden spoon to ensure the tomatoes are well coated.
  3. Create a space in the center of the tomato mixture and nestle the four pieces of feta cheese into the pan.
  4. Bake in the preheated oven for 20-30 minutes, or until the cherry tomatoes have burst open and the feta is softened and lightly golden.
  5. Remove the pan from the oven. Garnish the dish with red chili flakes and fresh chopped parsley. Serve immediately with your favorite pasta or crusty bread.
