Thai Green Curry Cod by Finn Tonry

Flaky cod simmered in a quick Thai green curry sauce with shallots, chilies, coconut, and lime.

Ingredients

  • 400g cod loin
  • 2 shallots, finely sliced
  • 2 tbsp Thai green curry paste
  • 1 cup coconut milk
  • 4 Thai red chilies, thinly sliced
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • 1 tbsp lime juice
  • 1 tbsp neutral oil
  • to serve fresh basil or coriander

Instructions

  1. Heat the oil in a skillet over medium heat. Add the shallots and Thai red chilies and cook for 2-3 minutes until softened and fragrant.
  2. Stir in the green curry paste and cook for 1 minute, then pour in the coconut milk.
  3. Season the sauce with fish sauce and brown sugar, then bring it to a gentle simmer.
  4. Add the cod loin and simmer gently for 6-8 minutes, spooning sauce over the fish, until it is opaque and flakes easily.
  5. Finish with lime juice and serve with fresh basil or coriander.
