Thai Green Curry Cod by Finn Tonry

Flaky cod simmered in a quick Thai green curry sauce with shallots, chilies, coconut, and lime.

Ingredients
- 400g cod loin
- 2 shallots, finely sliced
- 2 tbsp Thai green curry paste
- 1 cup coconut milk
- 4 Thai red chilies, thinly sliced
- 1 tbsp fish sauce
- 1 tsp brown sugar
- 1 tbsp lime juice
- 1 tbsp neutral oil
- to serve fresh basil or coriander
Instructions
- Heat the oil in a skillet over medium heat. Add the shallots and Thai red chilies and cook for 2-3 minutes until softened and fragrant.
- Stir in the green curry paste and cook for 1 minute, then pour in the coconut milk.
- Season the sauce with fish sauce and brown sugar, then bring it to a gentle simmer.
- Add the cod loin and simmer gently for 6-8 minutes, spooning sauce over the fish, until it is opaque and flakes easily.
- Finish with lime juice and serve with fresh basil or coriander.
