- 0.5 cup browned butter
- 0.33 cup granulated sugar
- 0.5 cup brown sugar
- 1 egg, room temperature
- 2 tbsp vanilla extract
- 1.25 cup all purpose flour
- 0.5 tsp baking soda
- 0.125 tsp salt
- 0.5 cup chopped chocolate
- 1.5 cup toasted kataifi
- 0.5 cup pistachio cream
Instructions
- Brown the butter in a pan over medium heat until golden and fragrant, then allow it to cool slightly.
- In a medium bowl, whisk together the browned butter, granulated sugar, and brown sugar until smooth.
- Add the egg and vanilla to the butter mixture, whisking until fully incorporated.
- Fold in the flour, baking soda, and salt until a soft dough forms; stir in the chopped chocolate.
- In a separate small bowl, mix the toasted kataifi with the pistachio cream to create the filling
- Divide the cookie dough into 6 equal portions, flatten each, place a spoonful of filling in the center, and seal the edges to form a ball.
- Place the cookies on a parchment-lined baking sheet and bake at 350F for 15 minutes until edges are golden.
