Ingredients

  • 0.5 cup browned butter
  • 0.33 cup granulated sugar
  • 0.5 cup brown sugar
  • 1 egg, room temperature
  • 2 tbsp vanilla extract
  • 1.25 cup all purpose flour
  • 0.5 tsp baking soda
  • 0.125 tsp salt
  • 0.5 cup chopped chocolate
  • 1.5 cup toasted kataifi
  • 0.5 cup pistachio cream

Instructions

  1. Brown the butter in a pan over medium heat until golden and fragrant, then allow it to cool slightly.
  2. In a medium bowl, whisk together the browned butter, granulated sugar, and brown sugar until smooth.
  3. Add the egg and vanilla to the butter mixture, whisking until fully incorporated.
  4. Fold in the flour, baking soda, and salt until a soft dough forms; stir in the chopped chocolate.
  5. In a separate small bowl, mix the toasted kataifi with the pistachio cream to create the filling
  6. Divide the cookie dough into 6 equal portions, flatten each, place a spoonful of filling in the center, and seal the edges to form a ball.
  7. Place the cookies on a parchment-lined baking sheet and bake at 350F for 15 minutes until edges are golden.
