Viral Scrambled Oats by Feelgoodfoodie
Pan-fried banana oat scramble with Greek yogurt, high in protein and fiber.

Ingredients
- 1 ripe banana, mashed
- 1/2 cup rolled oats
- 1 large egg
- 3 tbsp plain Greek yogurt
- 1/2 tsp ground cinnamon
- 1 pinch of salt
- Greek yogurt, for serving
- 1/4 cup mixed berries, for serving
- 2 tbsp shredded coconut, for serving
Instructions
- Mash the banana in a bowl until smooth, then mix in the oats, egg, Greek yogurt, cinnamon, and salt until a thick batter forms.
- Heat a non-stick skillet over medium heat — no butter or oil needed.
- Pour the batter into the pan and spread it out evenly; cook undisturbed for 5 minutes until the bottom is set and golden.
- Using a spatula, scramble and break up the mixture like scrambled eggs, stirring and folding for 2–3 minutes until cooked through and slightly golden in spots.
- Transfer to a bowl and top with a dollop of Greek yogurt, fresh berries, and shredded coconut; serve immediately.
