Confit Turnips by Fallow

Tender turnip halves are slowly cooked in olive oil with subtle seasoning until deeply flavorful and meltingly soft.

Ingredients
- 4-6 medium turnips (about 600g / 1 lb 5 oz)
- 2 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 150°C (300°F). Wash and trim the turnips, then cut off the tops and halve them lengthwise.
- Arrange the turnip halves in a small oven-safe baking dish. Pour the olive oil over the turnips, ensuring they are mostly submerged. Season with salt and black pepper.
- Bake for 1 hour 30 minutes to 2 hours, or until the turnips are fork-tender and slightly caramelized. Serve warm.
