One-Pot Lazy Woman Chicken And Rice by Everythingsmajor

Ingredients
- 4 chicken thighs, bone-in skin-on
- 1.5 cup long-grain white rice
- 3 cup chicken broth
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp paprika
- 1 tbsp olive oil
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper
Instructions
- Season chicken thighs with salt, pepper, and paprika on all sides.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat and sear chicken for 4-5 minutes per side until skin is golden brown; remove and set aside.
- Add diced onion to the same pan and sauté for 3-5 minutes until translucent.
- Stir in the minced garlic and rice, cooking for 1-2 minutes until the rice is lightly toasted and fragrant.
- Pour in the chicken broth and sprinkle with dried thyme, scraping the bottom of the pan to release any browned bits.
- Nestle the chicken thighs back into the pan on top of the rice mixture.
- Cover with a tight-fitting lid, reduce heat to low, and simmer for 20-25 minutes until the rice is tender and liquid is fully absorbed.
- Remove from heat and let sit covered for 5 minutes before serving.
