One-Pot Lazy Woman Chicken And Rice by Everythingsmajor

Ingredients

  • 4 chicken thighs, bone-in skin-on
  • 1.5 cup long-grain white rice
  • 3 cup chicken broth
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tbsp olive oil
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper

Instructions

  1. Season chicken thighs with salt, pepper, and paprika on all sides.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat and sear chicken for 4-5 minutes per side until skin is golden brown; remove and set aside.
  3. Add diced onion to the same pan and sauté for 3-5 minutes until translucent.
  4. Stir in the minced garlic and rice, cooking for 1-2 minutes until the rice is lightly toasted and fragrant.
  5. Pour in the chicken broth and sprinkle with dried thyme, scraping the bottom of the pan to release any browned bits.
  6. Nestle the chicken thighs back into the pan on top of the rice mixture.
  7. Cover with a tight-fitting lid, reduce heat to low, and simmer for 20-25 minutes until the rice is tender and liquid is fully absorbed.
  8. Remove from heat and let sit covered for 5 minutes before serving.
