Creamy rotisserie chicken salad with crisp apple and peppers, topped with melted cheddar on toasted brioche.

Ingredients

  • 2 cup rotisserie chicken, shredded or chopped
  • 1/3 cup mayonnaise
  • 1 tbsp yellow mustard
  • 2 tbsp sweet relish
  • 1/3 cup red apple, diced
  • 1/4 cup red onion, diced
  • 1/4 cup celery, diced
  • 1/4 cup red bell pepper, diced
  • 1/4 cup green bell pepper, diced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp sweet paprika
  • 4 slices cheddar cheese
  • 4 brioche slider buns
  • 2 tbsp butter, melted
  • 1 cup dried parsley

Instructions

  1. Combine shredded chicken, mayonnaise, mustard, relish, apple, onion, celery, and peppers in a large bowl, stirring until evenly coated.
  2. Fold in the salt, black pepper, onion powder, garlic powder, cayenne, and paprika until well incorporated.
  3. Brush the cut sides of the slider buns with melted butter and toast in a pan over medium heat for 2 minutes until golden.
  4. Assemble the sliders by placing a generous scoop of chicken salad on the bottom bun, topping with a slice of cheddar cheese.
  5. Place the assembled sliders under a broiler for 2-3 minutes or until the cheese is bubbly and melted.
  6. Sprinkle with dried parsley, add the top bun, and serve immediately.
