Honey-Lime Cilantro Chicken Rice Bowls by Everything Delish
Tender honey-lime glazed chicken served over fluffy cilantro-infused rice for a balanced, vibrant meal.

Ingredients
- 600g (1.3 lb) chicken breast, cut into bite-sized pieces
- 1/3 cup olive oil
- 1/4 cup honey
- 3 tbsp fresh lime juice
- 2 cloves garlic, minced
- 1 tsp chili powder
- 2 cup long-grain white rice, uncooked
- 4 cup chicken broth or water
- 1/2 cup fresh cilantro, chopped
- 1 tbsp lime zest
- 1/2 tsp salt (adjust to taste)
Instructions
- Whisk together olive oil, honey, lime juice, minced garlic, and chili powder in a bowl to create the marinade over medium heat until heated through, about 5 min.
- Place chicken pieces in a shallow dish, pour the marinade over, and let sit for at least 15 minutes at room temperature.
- Rinse rice under cold water until clear, then combine with chicken broth in a pot and bring to a boil; cover and simmer for 18 minutes until tender.
- Heat a large skillet over medium-high heat and add the marinated chicken, cooking for 6-8 minutes until golden brown and cooked through.
- Fluff the cooked rice with a fork and stir in the fresh chopped cilantro and lime zest until ready to serve.
- Assemble bowls by portioning the cilantro rice and topping with the honey-lime chicken until ready to serve.
