Classic Spam Musubi by Erinscozykitchen
Savory glazed Spam slices layered over seasoned sushi rice, wrapped in crisp sheets of nori.

Ingredients
- 1 can (340g/12 oz) spam, sliced into 8 even rectangles
- 3 cup cooked sushi rice, warm
- 4 sheets nori (dried seaweed), cut into 2-inch wide strips
- 3 tbsp soy sauce
- 2 tbsp granulated sugar
- 1 tbsp mirin
- 1 tbsp vegetable oil
Instructions
- Whisk together the soy sauce, sugar, and mirin in a small bowl until the sugar is fully dissolved.
- Heat the vegetable oil in a non-stick skillet over medium heat and sear the Spam slices for 2-3 minutes per side until golden brown.
- Pour the soy sauce mixture into the skillet and cook for 1-2 minutes until the sauce thickens and glazes the Spam, then remove from heat.
- Place a musubi mold (or a clean, empty Spam can lined with plastic wrap) on a cutting board and fill with a 1/2-inch layer of rice, pressing down firmly until ready to serve.
- Place a glazed Spam slice on top of the rice layer and press down again to compact until ready to serve.
- Remove the mold, wrap a strip of nori around the center of the musubi, and press the ends together to seal until ready to serve.
