Ingredients

  • 3 cups (360g) all-purpose flour
  • 2 1/4 tsp (1 packet) instant yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 3/4 cup warm water (110°F)
  • 2 tbsp avocado oil (such as Chosen Foods)
  • 2 tbsp avocado oil mayo (such as Chosen Foods)
  • 1 egg
  • 4 tbsp unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 1/2 cups (150g) shredded mozzarella cheese
  • 1/4 cup (25g) grated Parmesan cheese
  • 1/4 tsp garlic powder

Instructions

  1. In a large bowl, whisk together flour, instant yeast, sugar, and salt. Add warm water, avocado oil, mayo, and egg, then mix until a shaggy dough forms.
  2. Knead dough on a lightly floured surface for 8–10 minutes until smooth and elastic, or use a stand mixer with a dough hook on medium speed for 6–7 minutes.
  3. Place dough in a lightly oiled bowl, cover with a clean towel, and let rise in a warm spot for 1 hour or until doubled in size.
  4. While dough rises, mix softened butter, minced garlic, parsley, and garlic powder together in a small bowl to form garlic butter.
  5. Punch down risen dough and divide into 12 equal pieces. Flatten each piece, add a pinch of mozzarella in the center, then pinch closed and roll into a ball.
  6. Arrange rolls in a greased 9×13-inch baking dish. Spread garlic butter generously over the tops of all rolls.
  7. Cover and let rolls rise a second time for 30 minutes until puffy. Preheat oven to 375°F (190°C) during this time.
  8. Sprinkle remaining mozzarella and Parmesan over the tops of the rolls. Bake for 22–25 minutes until golden brown and cheese is bubbly.
  9. Remove from oven and brush with any remaining garlic butter. Serve warm.
