Sapporo Ichiban French Onion Style Ramen by Epicurious

Sweet caramelized onions and rich melted cheese transform instant ramen into a comforting French onion noodle soup.

Ingredients

  • 1 Sapporo Ichiban Original Ramen package
  • 1 large Onion, sliced
  • 1 cup Water
  • 1 tsp Soy sauce
  • 1 tsp Worcestershire sauce
  • 1 tbsp Butter
  • 1/4 cup Smoked mozzarella, grated (or Gruyère)
  • to taste Freshly ground black pepper
  • 1 Chinese donut (or toasted bread), for serving
  • 1 tbsp Oil (for caramelizing onions)

Instructions

  1. Heat oil in a medium pan over medium-low heat. Add sliced onions and cook slowly for 15-20 minutes, stirring occasionally, until deeply caramelized and golden brown.
  2. Deglaze the pan by adding water. Scrape up all the fond (caramelized bits) from the bottom of the pan, stirring until dissolved into the liquid.
  3. Add soy sauce, Worcestershire sauce, and butter to the pan. Bring the mixture to a full boil.
  4. Add the ramen noodles to the boiling liquid, keeping them intact. Cook according to package directions, about 2-3 minutes, maintaining a wiggly shape for bouncy texture.
  5. Stir in the grated smoked mozzarella until melted and well combined with the noodles and broth, ensuring cheese coats every strand.
  6. Season generously with freshly ground black pepper. Serve immediately with a Chinese donut or toasted bread on the side to soak up the broth.
  7. To serve, place the ramen into a bowl. You can soak the Chinese donut directly into the soup or serve it alongside.
