Sapporo Ichiban French Onion Style Ramen by Epicurious

Sweet caramelized onions and rich melted cheese transform instant ramen into a comforting French onion noodle soup.

Ingredients
- 1 Sapporo Ichiban Original Ramen package
- 1 large Onion, sliced
- 1 cup Water
- 1 tsp Soy sauce
- 1 tsp Worcestershire sauce
- 1 tbsp Butter
- 1/4 cup Smoked mozzarella, grated (or Gruyère)
- to taste Freshly ground black pepper
- 1 Chinese donut (or toasted bread), for serving
- 1 tbsp Oil (for caramelizing onions)
Instructions
- Heat oil in a medium pan over medium-low heat. Add sliced onions and cook slowly for 15-20 minutes, stirring occasionally, until deeply caramelized and golden brown.
- Deglaze the pan by adding water. Scrape up all the fond (caramelized bits) from the bottom of the pan, stirring until dissolved into the liquid.
- Add soy sauce, Worcestershire sauce, and butter to the pan. Bring the mixture to a full boil.
- Add the ramen noodles to the boiling liquid, keeping them intact. Cook according to package directions, about 2-3 minutes, maintaining a wiggly shape for bouncy texture.
- Stir in the grated smoked mozzarella until melted and well combined with the noodles and broth, ensuring cheese coats every strand.
- Season generously with freshly ground black pepper. Serve immediately with a Chinese donut or toasted bread on the side to soak up the broth.
- To serve, place the ramen into a bowl. You can soak the Chinese donut directly into the soup or serve it alongside.
