Grape Dumplings by Epicurious

Tender dumplings simmered in a thick, sweet wild grape sauce with old-fashioned Southern character.

Ingredients
- 2 cups (260 g) all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp fine salt
- 1 1/4 cups (250 g) sugar, divided
- 4 tbsp (60 g) cold unsalted butter, cubed
- 1 cup (240 ml) whole milk
- 4 cups (370 g) wild grapes, fresh or frozen
- 2 cups (470 ml) water
Instructions
- Combine the flour, baking powder, salt, and 1/4 cup of the sugar in a large bowl, then cut in the butter until the mixture looks like coarse crumbs, about 3 minutes.
- Add the milk gradually and mix just until a soft dough forms, about 1 minute.
- Roll the dough on a lightly floured surface to 1/4-inch thickness, then cut into 1 x 2-inch rectangles and set aside.
- Bring the grapes and water to a boil over medium-high heat, then reduce to a simmer and cook until the grapes begin to break down, about 10 minutes.
- Stir in the remaining 1 cup sugar and simmer until dissolved and slightly thickened, about 3 minutes.
- Drop the dough pieces into the simmering grape mixture, cover, and cook until the dumplings are tender and cooked through, 10 to 15 minutes.
