Roasted Pepper Shrimp by Entreesofdelight

Succulent sautéed shrimp tossed in a vibrant, smoky roasted red pepper sauce with aromatic garlic.

Ingredients

  • 450g (1 lb) large shrimp, peeled and deveined
  • 250g (9 oz) roasted red peppers, jarred or homemade
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Blend the roasted red peppers in a food processor until completely smooth and set aside.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Pour the blended roasted red pepper puree into the skillet along with smoked paprika, salt, and pepper until ready to serve.
  6. Simmer the sauce and shrimp together for 2-3 minutes until the sauce thickens and coats the shrimp thoroughly.
  7. Garnish with fresh parsley before serving until ready to serve.
