Roasted Pepper Shrimp by Entreesofdelight
Succulent sautéed shrimp tossed in a vibrant, smoky roasted red pepper sauce with aromatic garlic.

Ingredients
- 450g (1 lb) large shrimp, peeled and deveined
- 250g (9 oz) roasted red peppers, jarred or homemade
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Blend the roasted red peppers in a food processor until completely smooth and set aside.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add the shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Pour the blended roasted red pepper puree into the skillet along with smoked paprika, salt, and pepper until ready to serve.
- Simmer the sauce and shrimp together for 2-3 minutes until the sauce thickens and coats the shrimp thoroughly.
- Garnish with fresh parsley before serving until ready to serve.
