Spicy Feta Chicken Crunch by Emthenutritionist
High-protein meal-prep chicken filling with cottage cheese, feta, harissa, and crunchy vegetables.

Ingredients
- 2 cooked chicken breasts, shredded
- 200g cottage cheese
- 80g feta cheese, crumbled
- 1 small red onion, finely diced
- 1 red pepper, finely diced
- 1 tsp harissa paste
- 1 tsp garlic granules
- 1 tsp runny honey
- Juice of 1/2 lemon
- 1 small handful fresh parsley or basil, finely chopped
Instructions
- Add the cottage cheese, harissa paste, feta, garlic granules, honey, lemon juice, and red onion to a bowl and mix for 1-2 minutes until combined and the feta starts breaking into the sauce.
- Fold in the shredded chicken, diced red pepper, and chopped herbs for about 30 seconds until evenly coated.
- Taste and adjust with a little extra lemon or harissa if needed, then mix again briefly.
- Spoon into an airtight container and chill for at least 30 minutes before serving, or use immediately.
- Store in the fridge for up to 3 days and stir before serving if it separates.
