Ingredients

  • 2 cooked chicken breasts, shredded
  • 200g cottage cheese
  • 80g feta cheese, crumbled
  • 1 small red onion, finely diced
  • 1 red pepper, finely diced
  • 1 tsp harissa paste
  • 1 tsp garlic granules
  • 1 tsp runny honey
  • Juice of 1/2 lemon
  • 1 small handful fresh parsley or basil, finely chopped

Instructions

  1. Add the cottage cheese, harissa paste, feta, garlic granules, honey, lemon juice, and red onion to a bowl and mix for 1-2 minutes until combined and the feta starts breaking into the sauce.
  2. Fold in the shredded chicken, diced red pepper, and chopped herbs for about 30 seconds until evenly coated.
  3. Taste and adjust with a little extra lemon or harissa if needed, then mix again briefly.
  4. Spoon into an airtight container and chill for at least 30 minutes before serving, or use immediately.
  5. Store in the fridge for up to 3 days and stir before serving if it separates.
