One-Bowl Butterbean Caesar Salad by Emthenutritionist

Shredded chicken and butterbeans served over crisp lettuce with diced avocado and shards of cured ham.

Ingredients

  • 1 head little gem lettuce, chopped
  • 100g cooked shredded chicken breast
  • 80g (3 heaped tbsp) butter beans, drained and rinsed
  • 1/2 small avocado, diced
  • 2 slices cured ham (serrano or parma)
  • 2 anchovies
  • 1 tbsp % greek yoghurt
  • 1 tsp dijon mustard
  • 10g parmesan, finely grated
  • 1/2 lemon, juiced
  • 1 tsp worcestershire sauce
  • 1/4 tsp garlic granules
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Crisp the ham in a frying pan over medium-high heat for 3-4 minutes until golden and brittle, then remove and set aside.
  2. Mash the anchovies in a large bowl with a fork, incorporating the lemon juice, Dijon mustard, Worcestershire sauce, and garlic granules.
  3. Whisk in the Greek yoghurt, grated Parmesan, salt, and pepper until the dressing is smooth.
  4. Add the chopped little gem lettuce, butter beans, diced avocado, and shredded chicken to the bowl.
  5. Break the crispy ham into shards and add to the bowl, then toss all ingredients thoroughly until well coated in the dressing.
