One-Bowl Butterbean Caesar Salad by Emthenutritionist
Shredded chicken and butterbeans served over crisp lettuce with diced avocado and shards of cured ham.

Ingredients
- 1 head little gem lettuce, chopped
- 100g cooked shredded chicken breast
- 80g (3 heaped tbsp) butter beans, drained and rinsed
- 1/2 small avocado, diced
- 2 slices cured ham (serrano or parma)
- 2 anchovies
- 1 tbsp % greek yoghurt
- 1 tsp dijon mustard
- 10g parmesan, finely grated
- 1/2 lemon, juiced
- 1 tsp worcestershire sauce
- 1/4 tsp garlic granules
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Crisp the ham in a frying pan over medium-high heat for 3-4 minutes until golden and brittle, then remove and set aside.
- Mash the anchovies in a large bowl with a fork, incorporating the lemon juice, Dijon mustard, Worcestershire sauce, and garlic granules.
- Whisk in the Greek yoghurt, grated Parmesan, salt, and pepper until the dressing is smooth.
- Add the chopped little gem lettuce, butter beans, diced avocado, and shredded chicken to the bowl.
- Break the crispy ham into shards and add to the bowl, then toss all ingredients thoroughly until well coated in the dressing.
