Healthy Broccoli & Garlic Spaghetti by Emthenutritionist
Spaghetti tossed with savory chicken mince, tender broccoli, and a fragrant garlic and anchovy base.

Ingredients
- 150 g spaghetti
- 200 g tenderstem broccoli
- 1 large leek
- 2 sticks celery
- 2 cloves garlic
- 5 fillets anchovy fillets
- 0.5 tsp chili flakes
- 200 g chicken mince
- 40 g parmesan
- 0.5 cube chicken stock cube
- 1 tbsp light creme fraiche
- 0.5 lemon
- 1 cup parsley
Instructions
- Heat a large frying pan over medium heat and melt the anchovy fillets.
- Add sliced leek, celery, and chilli flakes; sauté for 3–4 minutes until softened.
- Add chicken mince and minced garlic; cook until browned, breaking it up with a spoon.
- Bring a pot of salted water to a boil and cook spaghetti according to package directions
- Deglaze the frying pan with 3 tbsp of pasta water, crumble in the stock cube, and stir.
- Add chopped broccoli to the pan and sauté for 3 minutes until tender.
- Reserve a mug of pasta water, then drain the spaghetti
- Add cooked pasta to the pan with parmesan and creme fraiche; toss well to emulsify
- Finish with lemon zest, a squeeze of lemon juice, and chopped parsley, adding reserved water if needed to loosen the sauce.
