Honey-Glazed Spiral Ham by Elizabethwu

Tender, succulent spiral-sliced ham with a signature crackling, spice-infused caramelized sugar crust and pineapple glaze.

Ingredients
- 1 (11 lb) smoked spiral sliced ham, bone-in
- 1 cup pineapple juice
- 4 tbsp grass-fed butter, melted
- 4 tbsp hot honey
- 3 cup dark brown sugar, packed
- 1.5 cup granulated white sugar
- 1.5 tsp seasoned salt
- 1.5 tsp garlic powder
- 1 tbsp ground cinnamon
- 1.5 tsp ground nutmeg
- 1.5 tsp ground cloves
- 1.5 tsp ground ginger
- 1.5 tsp sweet paprika
- 1 tsp ground allspice
- 1 tbsp apple cider vinegar
- 2 tbsp dijon mustard
Instructions
- Preheat oven to 275°F (135°C). Place ham flat-side down in a large roasting pan.
- Whisk melted butter and hot honey together, then brush the mixture evenly over the entire surface of the ham.
- Pour 1 cup of pineapple juice into the bottom of the roasting pan.
- Cover the pan tightly with foil and bake for approximately 1 hour and 50 minutes (or 10-12 minutes per pound).
- In a medium bowl, combine brown sugar, white sugar, seasoned salt, garlic powder, cinnamon, nutmeg, cloves, ginger, paprika, and allspice. Divide this mixture into three equal portions.
- Remove foil from the ham. Pat the first portion of the sugar mixture over the ham, ensuring it gets into the crevices between slices.
- Broil on high for 2 minutes until the sugar begins to melt.
- Remove from oven, apply the second portion of the sugar mixture, and broil for another 2 minutes.
- For the final glaze, whisk 1 cup of reserved pan drippings with the final third of the sugar mixture, apple cider vinegar, and Dijon mustard in a small saucepan. Bring to a boil over medium heat, then remove from heat.
- Brush the glaze over the ham and perform a final 2-3 minute broil until the crust is deeply caramelized and bubbly.
- Rest the ham for 10 minutes before carving and serving.
