Rich layers of espresso-soaked ladyfingers and velvety mascarpone cream, finished with a dusting of cocoa.

Ingredients

  • 5 large eggs, separated
  • 1/4 cup plus 1 tbsp granulated sugar, divided
  • 16 oz mascarpone cheese
  • 34 ladyfingers
  • 1/2 cup espresso powder
  • 2 cup water, room temperature
  • 1 cup marsala wine
  • 1/4 cup cocoa powder

Instructions

  1. Separate the egg yolks and whites into two large bowls.
  2. Add 1/4 cup sugar to the yolks and beat on high speed for 5 minutes until pale and creamy.
  3. Mix the mascarpone into the yolk mixture and beat for 2 minutes until fully combined and smooth.
  4. Add 1 tbsp sugar to the egg whites and whip on high speed for 5 minutes until stiff peaks form.
  5. Gently fold the whipped egg whites into the mascarpone mixture, being careful to maintain the volume.
  6. Whisk the espresso powder and water in a shallow bowl, then stir in the Marsala wine.
  7. Briefly dunk each ladyfinger into the espresso mixture, then line them in a rectangular dish.
  8. Spread half of the mascarpone mixture over the ladyfingers, then repeat the layering process once more with the remaining ingredients to create four total layers.
  9. Refrigerate for at least 1 hour, or ideally overnight, before dusting with cocoa powder to serve.
