Chicken and Couscous Skillet by Eatwithtori

Tender seasoned chicken thighs seared and served alongside fluffy couscous and caramelized onions.

Ingredients
- 4 (approx. 600g) chicken thighs, bone-in or boneless
- 1 tsp salt
- 1 tbsp italian seasoning
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 tbsp olive oil
- 1 large yellow onion, thinly sliced
- 1.5 cup dry couscous
- 2 cup chicken broth
Instructions
- Pat chicken thighs dry and season thoroughly with salt, Italian seasoning, thyme, and rosemary until ready to serve.
- Heat olive oil in a large skillet over medium-high heat and sear chicken for 6-8 minutes per side until golden brown and cooked through; remove from pan.
- Add sliced onions to the same pan and sauté for 5-7 minutes until soft and lightly caramelized.
- Pour in chicken broth and bring to a gentle boil over medium-high heat.
- Stir in the couscous, remove from heat, cover tightly with a lid, and let sit for 5 minutes to steam.
- Fluff the couscous with a fork, nestle the cooked chicken back into the skillet, and serve immediately until ready to serve.
