Chicken and Couscous Skillet by Eatwithtori

Tender seasoned chicken thighs seared and served alongside fluffy couscous and caramelized onions.

Ingredients

  • 4 (approx. 600g) chicken thighs, bone-in or boneless
  • 1 tsp salt
  • 1 tbsp italian seasoning
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp olive oil
  • 1 large yellow onion, thinly sliced
  • 1.5 cup dry couscous
  • 2 cup chicken broth

Instructions

  1. Pat chicken thighs dry and season thoroughly with salt, Italian seasoning, thyme, and rosemary until ready to serve.
  2. Heat olive oil in a large skillet over medium-high heat and sear chicken for 6-8 minutes per side until golden brown and cooked through; remove from pan.
  3. Add sliced onions to the same pan and sauté for 5-7 minutes until soft and lightly caramelized.
  4. Pour in chicken broth and bring to a gentle boil over medium-high heat.
  5. Stir in the couscous, remove from heat, cover tightly with a lid, and let sit for 5 minutes to steam.
  6. Fluff the couscous with a fork, nestle the cooked chicken back into the skillet, and serve immediately until ready to serve.
