Chicken Kelaguen by Eatsallornothing
Tender grilled chicken tossed in zesty lemon juice with fresh chili, green onions, and creamy coconut.

Ingredients
- 500g (1.1 lb) chicken breast, boneless and skinless
- 1/2 cup fresh lemon juice
- 3 stalks green onions, thinly sliced
- 1 thai chili pepper, minced (adjust for heat)
- 1/4 cup fresh grated coconut or unsweetened coconut milk
- 1 tsp salt
Instructions
- Grill the chicken breast over medium-high heat for 6-8 minutes per side until fully cooked through and slightly charred.
- Remove chicken from heat, let it rest for 5 minutes, then finely mince the meat into small pieces.
- Place minced chicken in a large mixing bowl and toss with the fresh lemon juice and salt until well combined.
- Stir in the sliced green onions, minced chili, and grated coconut until ready to serve.
- Refrigerate for at least 30 minutes to allow the flavors to meld and the lemon juice to 'cook' the chicken mixture.
- Serve chilled as a refreshing appetizer or main dish until ready to serve.
