Tender grilled chicken tossed in zesty lemon juice with fresh chili, green onions, and creamy coconut.

Ingredients

  • 500g (1.1 lb) chicken breast, boneless and skinless
  • 1/2 cup fresh lemon juice
  • 3 stalks green onions, thinly sliced
  • 1 thai chili pepper, minced (adjust for heat)
  • 1/4 cup fresh grated coconut or unsweetened coconut milk
  • 1 tsp salt

Instructions

  1. Grill the chicken breast over medium-high heat for 6-8 minutes per side until fully cooked through and slightly charred.
  2. Remove chicken from heat, let it rest for 5 minutes, then finely mince the meat into small pieces.
  3. Place minced chicken in a large mixing bowl and toss with the fresh lemon juice and salt until well combined.
  4. Stir in the sliced green onions, minced chili, and grated coconut until ready to serve.
  5. Refrigerate for at least 30 minutes to allow the flavors to meld and the lemon juice to 'cook' the chicken mixture.
  6. Serve chilled as a refreshing appetizer or main dish until ready to serve.
