- 1.5 tbsp creamy peanut butter
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp maple syrup
- 1 tsp toasted sesame oil
- 1 tbsp warm water (to thin dressing)
- 4 cup shredded cabbage (red and green mix)
- 1 cup shredded carrots
- 1/2 cup sliced cucumber
- 1/4 cup chopped cilantro
- 1/4 cup crushed roasted peanuts
Instructions
- Whisk the peanut butter, soy sauce, lime juice, maple syrup, and sesame oil in a small bowl until smooth.
- Add warm water one teaspoon at a time until the dressing reaches a pourable consistency.
- Combine the shredded cabbage, carrots, and cucumber in a large mixing bowl.
- Pour the peanut dressing over the vegetables and toss thoroughly for 1-2 minutes until evenly coated.
- Top with chopped cilantro and crushed peanuts before serving immediately.
