Ingredients

  • 1.5 tbsp creamy peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp maple syrup
  • 1 tsp toasted sesame oil
  • 1 tbsp warm water (to thin dressing)
  • 4 cup shredded cabbage (red and green mix)
  • 1 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup chopped cilantro
  • 1/4 cup crushed roasted peanuts

Instructions

  1. Whisk the peanut butter, soy sauce, lime juice, maple syrup, and sesame oil in a small bowl until smooth.
  2. Add warm water one teaspoon at a time until the dressing reaches a pourable consistency.
  3. Combine the shredded cabbage, carrots, and cucumber in a large mixing bowl.
  4. Pour the peanut dressing over the vegetables and toss thoroughly for 1-2 minutes until evenly coated.
  5. Top with chopped cilantro and crushed peanuts before serving immediately.
