Fresh Plum Tomato Pasta Sauce by Eatingwell

Rustic, bright tomato sauce made with blistered fresh plum tomatoes, aromatic garlic, and torn basil leaves.

Ingredients
- 1 kg (2.2 lbs) fresh plum tomatoes, halved
- 4 cloves garlic, thinly sliced
- 60 ml (1/4 cup) extra virgin olive oil
- 1 bunch fresh basil, leaves torn
- 1 tsp sea salt (adjust to taste)
- 1/2 tsp red pepper flakes (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add sliced garlic and red pepper flakes, sautéing for 1-2 minutes until fragrant and lightly golden.
- Place halved plum tomatoes cut-side down into the skillet and cook undisturbed for 5-7 minutes until charred.
- Flip the tomatoes and use a wooden spoon to gently crush them, letting them simmer for 10-12 minutes until a rustic sauce forms.
- Stir in the fresh torn basil and season with salt, tossing to combine before serving over your favorite pasta.
