Soft, chewy cookies featuring melted Biscoff spread and sweet white chocolate chips in every bite.

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/2 cup biscoff spread, melted
  • 2/3 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the melted butter, melted Biscoff spread, and brown sugar in a large bowl until smooth.
  3. Add the egg and vanilla extract, whisking until well combined.
  4. Fold in the flour, baking soda, and salt until just combined, being careful not to overmix.
  5. Stir in the white chocolate chips until ready to serve.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart until ready to serve.
  7. Bake for 10-12 minutes until the edges are set but the centers remain slightly soft.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
