Seared lemon-pepper seasoned chicken breast on toasted bread with a creamy, zesty citrus-infused mayonnaise.

Ingredients

  • 2 chicken breasts, butterflied
  • 1 tbsp lemon pepper seasoning
  • 1 tbsp olive oil
  • 4 slices sourdough bread
  • 4 tbsp light mayonnaise
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 cup lettuce, shredded

Instructions

  1. Season the chicken breasts thoroughly on both sides with lemon pepper seasoning until ready to serve.
  2. Heat olive oil in a skillet over medium-high heat and sear the chicken for 5-6 minutes per side until golden brown and cooked through.
  3. Whisk the mayonnaise, lemon zest, and lemon juice in a small bowl until smooth.
  4. Toast the bread slices until golden brown, about 2-3 minutes.
  5. Spread the lemon mayo on the toasted bread, then layer with lettuce and the cooked chicken breast to assemble until ready to serve.
