Lemon Pepper Chicken Sandwich by Donaldo Cooks
Seared lemon-pepper seasoned chicken breast on toasted bread with a creamy, zesty citrus-infused mayonnaise.

Ingredients
- 2 chicken breasts, butterflied
- 1 tbsp lemon pepper seasoning
- 1 tbsp olive oil
- 4 slices sourdough bread
- 4 tbsp light mayonnaise
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 1 cup lettuce, shredded
Instructions
- Season the chicken breasts thoroughly on both sides with lemon pepper seasoning until ready to serve.
- Heat olive oil in a skillet over medium-high heat and sear the chicken for 5-6 minutes per side until golden brown and cooked through.
- Whisk the mayonnaise, lemon zest, and lemon juice in a small bowl until smooth.
- Toast the bread slices until golden brown, about 2-3 minutes.
- Spread the lemon mayo on the toasted bread, then layer with lettuce and the cooked chicken breast to assemble until ready to serve.
