Ingredients

  • 1 chicken breast
  • 1/2 cup flour
  • 1 egg
  • 1 cup corn flakes, crushed
  • 1 tbsp avocado oil
  • 1/2 cup lime juice
  • 1 tbsp honey
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 cloves garlic, chopped
  • 1/2 cup water
  • 1 ciabatta bread
  • 1/2 cucumber, sliced
  • 1/4 cup cabbage, shredded
  • 1/4 jalapeno, thinly sliced
  • 2 tbsp pickle juice
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp lime zest

Instructions

  1. Dredge the chicken breast in flour, then egg, then crushed corn flakes.
  2. Air fry the coated chicken at 285°F (140°C) for 18 to 20 minutes, flipping halfway through, until an internal temperature of 165°F (74°C) is reached.
  3. While chicken cooks, prepare the sauce: In a pan, heat 1 tbsp avocado oil over medium heat.
  4. Add 1/2 cup lime juice, 1 tbsp honey, 1 tsp cumin, salt, pepper, 3 chopped garlic cloves, and 1/2 cup water.
  5. Simmer the sauce for a few minutes until slightly reduced.
  6. Prepare the cucumber salad: Slice cucumber, cabbage, and jalapeno.
  7. In a bowl, combine sliced vegetables with 2 tbsp pickle juice, salt, pepper, onion powder, garlic powder, and lime zest.
  8. Shake the salad well.
  9. Slice the ciabatta bread and toast if desired.
  10. Assemble the sandwich with the crispy chicken, cilantro lime sauce, and cucumber salad.
