Ingredients
- 1 chicken breast
- 1/2 cup flour
- 1 egg
- 1 cup corn flakes, crushed
- 1 tbsp avocado oil
- 1/2 cup lime juice
- 1 tbsp honey
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 cloves garlic, chopped
- 1/2 cup water
- 1 ciabatta bread
- 1/2 cucumber, sliced
- 1/4 cup cabbage, shredded
- 1/4 jalapeno, thinly sliced
- 2 tbsp pickle juice
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tsp lime zest
Instructions
- Dredge the chicken breast in flour, then egg, then crushed corn flakes.
- Air fry the coated chicken at 285°F (140°C) for 18 to 20 minutes, flipping halfway through, until an internal temperature of 165°F (74°C) is reached.
- While chicken cooks, prepare the sauce: In a pan, heat 1 tbsp avocado oil over medium heat.
- Add 1/2 cup lime juice, 1 tbsp honey, 1 tsp cumin, salt, pepper, 3 chopped garlic cloves, and 1/2 cup water.
- Simmer the sauce for a few minutes until slightly reduced.
- Prepare the cucumber salad: Slice cucumber, cabbage, and jalapeno.
- In a bowl, combine sliced vegetables with 2 tbsp pickle juice, salt, pepper, onion powder, garlic powder, and lime zest.
- Shake the salad well.
- Slice the ciabatta bread and toast if desired.
- Assemble the sandwich with the crispy chicken, cilantro lime sauce, and cucumber salad.
