Goodfellas-Style Sunday Sauce by Domenicskitchen

Slow-simmered tomato sauce with garlic and assorted meats, served over perfectly al dente pasta.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 6 cloves garlic, thinly sliced
  • 1.5 kg (3.3 lb) crushed tomatoes
  • 450g (1 lb) italian pork sausage links
  • 450g (1 lb) beef meatballs
  • 1 tsp dried oregano
  • 1/2 cup fresh basil leaves, torn
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 500g (1.1 lb) rigatoni or spaghetti pasta

Instructions

  1. Heat olive oil in a large heavy-bottomed pot over medium heat and sauté sliced garlic for 1-2 minutes until fragrant but not browned.
  2. Add the sausage links and meatballs to the pot, searing them on all sides for 5-7 minutes until browned.
  3. Pour in the crushed tomatoes, add oregano, salt, and pepper, then stir to combine until ready to serve.
  4. Reduce heat to low, cover partially, and simmer for 2.5 to 3 hours, stirring occasionally to prevent sticking.
  5. Stir in fresh basil during the final 10 minutes of simmering.
  6. Cook pasta in a large pot of salted boiling water according to package directions until al dente, about 8-10 minutes.
  7. Drain pasta and toss directly into the sauce or serve the sauce over the pasta over medium heat until heated through, about 5 min.
