Ingredients
- 4 cup old-fashioned rolled oats
- 1.5 cup mixed raw nuts (almonds, walnuts, pecans), roughly chopped
- 0.5 cup maple syrup
- 0.33 cup melted coconut oil
- 1 tsp vanilla extract
- 0.75 tsp kosher salt
- 0.5 cup raisins
Instructions
- Preheat your oven to 325°F (165°C) and line a large rimmed baking sheet with parchment paper.
- Whisk together the maple syrup, melted coconut oil, vanilla extract, and salt in a large mixing bowl until well combined.
- Add the rolled oats and chopped nuts to the liquid mixture, stirring until all dry ingredients are thoroughly coated.
- Spread the granola mixture in an even layer on the prepared baking sheet until ready to serve.
- Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown and fragrant.
- Remove from the oven and let cool completely on the pan to allow the granola to crisp up, about 30 minutes.
- Fold in the raisins once the granola is fully cooled and store in an airtight container over medium heat until heated through, about 5 min.
