Savory ground beef and roasted sweet potatoes served with creamy cottage cheese and sliced fresh avocado.

Ingredients

  • 0.5 lb ground beef
  • 1 whole sweet potato
  • 0.5 cup cottage cheese
  • 1 whole avocado
  • 1 tsp taco seasoning
  • 1 tbsp hot honey
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Instructions

  1. Preheat oven to 350 F. Cube the sweet potato, toss with salt and pepper, and bake for 30 minutes until tender.
  2. While the potato bakes, heat a pan over high heat and brown the ground beef for 5-7 minutes.
  3. Add taco seasoning, salt, and pepper to the beef, stir well, and remove from heat.
  4. Assemble the bowl by layering the cooked beef, roasted sweet potatoes, cottage cheese, and sliced avocado.
  5. Drizzle with hot honey and finish with an extra dusting of black pepper before serving.
