Serves: 4Prep: 10 minCook: 20 min

Ingredients

  • 4 skinless salmon fillets (about 6 oz each), patted dry
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 cup Caesar salad dressing, divided
  • 4 cups fresh broccoli florets
  • 1 tbsp olive oil
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp red pepper flakes (optional)
  • 1 tsp Italian seasoning (optional)

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment or lightly oil it, about 5 minutes.
  2. Season the salmon fillets with salt and pepper, then set them aside while the oven heats.
  3. Toss the broccoli with olive oil, salt, and pepper on the baking sheet, then nestle the salmon into the broccoli.
  4. Spread 1 to 2 tablespoons Caesar dressing over each fillet, then scatter mozzarella, parmesan, and any optional seasonings over the salmon and broccoli.
  5. Bake for 15 to 20 minutes, until the salmon flakes easily and reaches 130 to 145°F internally and the cheese is bubbly and lightly golden.
  6. Spoon or brush on the remaining Caesar dressing, if desired, and serve immediately while hot.
