Grandpa's Legendary Chocolate Mousse by Diandracappelut

Velvety dark chocolate mousse with a light, airy texture and a deep, decadent cocoa finish.

Ingredients

  • 300g % dark couverture chocolate
  • 6 large eggs, separated
  • 50g granulated sugar
  • 120ml heavy cream (35% fat)
  • 1/2 tsp salt

Instructions

  1. Melt the dark chocolate in a heatproof bowl set over a pot of simmering water, stirring until smooth, then remove from heat and let cool to room temperature.
  2. Whisk the egg yolks in a medium bowl until pale and slightly thickened, about 2 minutes.
  3. Gently fold the cooled melted chocolate into the egg yolks until fully combined.
  4. Whip the heavy cream in a chilled bowl until soft peaks form, about 3 minutes.
  5. Beat the egg whites with a pinch of salt in a clean bowl until stiff peaks form, gradually adding the sugar, about 4-5 minutes.
  6. Fold one-third of the egg whites into the chocolate mixture to lighten it, then gently fold in the remaining whites and the whipped cream until no streaks remain.
  7. Divide the mousse into serving glasses and refrigerate for at least 4 hours until set.
