Grandpa's Legendary Chocolate Mousse by Diandracappelut
Velvety dark chocolate mousse with a light, airy texture and a deep, decadent cocoa finish.

Ingredients
- 300g % dark couverture chocolate
- 6 large eggs, separated
- 50g granulated sugar
- 120ml heavy cream (35% fat)
- 1/2 tsp salt
Instructions
- Melt the dark chocolate in a heatproof bowl set over a pot of simmering water, stirring until smooth, then remove from heat and let cool to room temperature.
- Whisk the egg yolks in a medium bowl until pale and slightly thickened, about 2 minutes.
- Gently fold the cooled melted chocolate into the egg yolks until fully combined.
- Whip the heavy cream in a chilled bowl until soft peaks form, about 3 minutes.
- Beat the egg whites with a pinch of salt in a clean bowl until stiff peaks form, gradually adding the sugar, about 4-5 minutes.
- Fold one-third of the egg whites into the chocolate mixture to lighten it, then gently fold in the remaining whites and the whipped cream until no streaks remain.
- Divide the mousse into serving glasses and refrigerate for at least 4 hours until set.
