Juicy Grilled Chicken Kebabs with Mayo Marinade by Dianakonfederat
Slavic-inspired chicken kebabs marinated in mayo, vinaigrette, and red wine vinegar for maximum juiciness.

Ingredients
- 2 lbs chicken breast (or thighs), cut into chunks
- 2 medium onions, roughly chopped, plus extra sliced for skewers
- ½ cup mayonnaise (slightly heaping)
- 3 tbsp Giada Italian dressing / vinaigrette
- 3 tbsp red wine vinegar
- 1½ tsp complete seasoning (e.g. Sazón Completa or similar all-purpose blend)
Instructions
- Cut chicken breast into even chunks and place in a large mixing bowl.
- Roughly chop 2 onions and add to the bowl, separating the layers so they coat the chicken well.
- Pour red wine vinegar generously over the chicken — about 3 tablespoons — to provide acidity and tenderize the meat.
- Add a heaping half-cup of mayonnaise and the vinaigrette dressing, then sprinkle in the complete seasoning.
- Put on a glove and mix everything thoroughly by hand until every piece of chicken is well coated.
- Flatten the top, cover tightly with plastic wrap, and refrigerate for at least 1 hour — overnight is best. (Creator marinated for 3 hours.)
- Thread marinated chicken onto skewers, tucking a slice of sweet onion between each piece.
- Grill over medium-high heat, turning occasionally, until the internal temperature reaches 165°F (about 12–15 minutes total).
- Remove from grill and serve immediately with rice, salad, tzatziki, and jalapeños if desired.
