Tomato Peach Burrata Salad by Diana Malbertfood

Sweet summer peaches and vine-ripened tomatoes paired with creamy burrata for a refreshing seasonal salad.

Ingredients

  • 225g (8 oz) cherry tomatoes, halved
  • 2 large peaches, sliced into wedges
  • 225g (8 oz) burrata cheese
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze
  • 1/4 cup fresh basil leaves, torn
  • 1/2 tsp flaky sea salt

Instructions

  1. Arrange the sliced peaches and halved cherry tomatoes on a large serving platter.
  2. Place the burrata in the center and gently split it open to expose the creamy middle.
  3. Drizzle the olive oil and balsamic glaze evenly over the fruit and cheese.
  4. Scatter torn basil over the top and finish with flaky sea salt just before serving.
