Honey-Drizzled Baked Feta in Filo by Diana Malbertfood
Crisp, golden-brown filo pastry parcels encasing warm, creamy feta, finished with a sweet honey glaze.

Ingredients
- 200g (7 oz) feta cheese, cut into 2 rectangles
- 2 large filo pastry sheets
- 3 tbsp melted butter or ghee
- 1 tbsp sesame seeds
- 1 tbsp fresh thyme leaves
- 2 tbsp honey (for drizzling)
- 2 cup mixed salad leaves (for serving)
Instructions
- Preheat your oven to 180°C (350°F).
- Lay out each filo sheet and brush lightly with melted butter, then sprinkle with a portion of the fresh thyme and fold each sheet in half.
- Place one rectangle of feta at the end of each folded filo sheet and wrap the pastry around the cheese, brushing with butter as you roll to seal the edges.
- Ensure the parcels are not wrapped too tightly to allow for slight expansion during baking.
- Brush the outside of the pastry parcels with the remaining butter and sprinkle with sesame seeds.
- Bake on a parchment-lined tray for 20-25 minutes until the pastry is golden brown and crisp.
- Remove from the oven, drizzle immediately with honey, top with remaining fresh thyme, and serve alongside a bed of salad leaves.
