Honey-Drizzled Baked Feta in Filo by Diana Malbertfood

Crisp, golden-brown filo pastry parcels encasing warm, creamy feta, finished with a sweet honey glaze.

Ingredients

  • 200g (7 oz) feta cheese, cut into 2 rectangles
  • 2 large filo pastry sheets
  • 3 tbsp melted butter or ghee
  • 1 tbsp sesame seeds
  • 1 tbsp fresh thyme leaves
  • 2 tbsp honey (for drizzling)
  • 2 cup mixed salad leaves (for serving)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Lay out each filo sheet and brush lightly with melted butter, then sprinkle with a portion of the fresh thyme and fold each sheet in half.
  3. Place one rectangle of feta at the end of each folded filo sheet and wrap the pastry around the cheese, brushing with butter as you roll to seal the edges.
  4. Ensure the parcels are not wrapped too tightly to allow for slight expansion during baking.
  5. Brush the outside of the pastry parcels with the remaining butter and sprinkle with sesame seeds.
  6. Bake on a parchment-lined tray for 20-25 minutes until the pastry is golden brown and crisp.
  7. Remove from the oven, drizzle immediately with honey, top with remaining fresh thyme, and serve alongside a bed of salad leaves.
