Smash Burger Tacos: Less Fast Food, More Flavor made with extra lean ground beef, low carb tortilla and american cheese.

Ingredients
- 1/4 lb Extra lean ground beef
- 1 Low carb tortilla
- 1/2 slice - 1 slice American cheese (or low-fat)
- 2 tablespoons Light mayonnaise
- 1 tablespoon No sugar added ketchup
- 1 teaspoon Mustard
- 2 tablespoons Minced pickles
- 1/4 cup Shredded iceberg lettuce
- to taste Salt
- to taste Freshly cracked black pepper
- for cooking Spray oil
Instructions
- Prepare your toppings: Thinly slice iceberg lettuce and mince pickles. In a small bowl, combine light mayo, no sugar added ketchup, mustard, and minced pickles to create the sauce. Set aside.
- Assemble the base: Lay a low-carb tortilla flat. Place a quarter pound of extra lean ground beef in the center. Evenly spread the beef across the entire surface of the tortilla.
- Season generously: Sprinkle the beef-covered tortilla evenly with salt and freshly cracked black pepper to enhance the flavor of the burger. This ensures seasoning in every bite.
- Sear the beef: Heat a pan over medium-high heat with a spray of oil. Carefully place the tortilla, beef-side down, into the hot pan. Press firmly for maximum caramelization.
- Cook and flip: Sear the beef for about 2-3 minutes until deeply browned and caramelized. Carefully flip the tortilla over, leaving the cooked beef side facing up.
- Melt the cheese: Immediately place a half or full slice of American cheese (or low-fat option) on top of the cooked beef. Allow the cheese to melt.
- Crisp the tortilla: Continue to cook for another 2-3 minutes until the tortilla is golden brown and crisp. Ensure the cheese is fully melted and gooey.
- Serve and enjoy: Carefully remove the smash burger taco from the pan. Top with the prepared sauce and a generous portion of shredded lettuce. Serve immediately.
