Pasta Salad by Delish

Pasta Salad with fusilli pasta small mozzarella balls and cherry tomatoes finished with fresh herbs and citrus.

Ingredients

  • 1 lb fusilli pasta
  • 8 oz small mozzarella balls, halved
  • 1 pint cherry tomatoes, halved
  • 1 can (14 oz) artichoke hearts, chopped
  • 1/2 cup pitted black olives, sliced
  • 4 oz salami, quartered
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic, minced
  • 1 tbsp italian seasoning
  • 1/4 cup fresh parsley, chopped
  • 1/4 tsp red pepper flakes
  • 1/2 tsp (adjust to taste) salt
  • 1/2 tsp (adjust to taste) black pepper

Instructions

  1. Cook pasta according to package directions until al dente. Do not rinse.
  2. In a large bowl, combine the cooked pasta with halved mozzarella balls, halved cherry tomatoes, chopped artichoke hearts, sliced black olives, and quartered salami.
  3. In a jar with a lid, combine extra-virgin olive oil, red wine vinegar, minced garlic, Italian seasoning, chopped parsley, and red pepper flakes.
  4. Secure the lid and shake well to combine the dressing. Season with salt and pepper to taste.
  5. Pour the dressing over the pasta salad and toss to coat evenly.
  6. Serve immediately or chill for later.
