Pasta Salad with fusilli pasta small mozzarella balls and cherry tomatoes finished with fresh herbs and citrus.

Ingredients
- 1 lb fusilli pasta
- 8 oz small mozzarella balls, halved
- 1 pint cherry tomatoes, halved
- 1 can (14 oz) artichoke hearts, chopped
- 1/2 cup pitted black olives, sliced
- 4 oz salami, quartered
- 1/2 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1 tbsp italian seasoning
- 1/4 cup fresh parsley, chopped
- 1/4 tsp red pepper flakes
- 1/2 tsp (adjust to taste) salt
- 1/2 tsp (adjust to taste) black pepper
Instructions
- Cook pasta according to package directions until al dente. Do not rinse.
- In a large bowl, combine the cooked pasta with halved mozzarella balls, halved cherry tomatoes, chopped artichoke hearts, sliced black olives, and quartered salami.
- In a jar with a lid, combine extra-virgin olive oil, red wine vinegar, minced garlic, Italian seasoning, chopped parsley, and red pepper flakes.
- Secure the lid and shake well to combine the dressing. Season with salt and pepper to taste.
- Pour the dressing over the pasta salad and toss to coat evenly.
- Serve immediately or chill for later.
