Serves: 6Prep: 10 minCook: 20 min

Ingredients

  • 4 frozen breaded chicken cutlets
  • 1 lb cavatappi pasta
  • 1 tbsp extra-virgin olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 24 oz marinara sauce
  • 1 tsp salt (plus more for pasta water)
  • 1 cup Parmesan cheese, freshly grated (divided)
  • 1.5 cups mozzarella cheese, shredded
  • 1/4 cup fresh basil leaves, torn

Instructions

  1. Preheat oven to 400°F. Cook frozen chicken according to package instructions until crispy; let cool slightly, then slice into strips.
  2. Bring a large pot of salted water to a boil. Cook pasta until al dente, about 8-10 minutes. Drain and set aside.
  3. In a large ovenproof skillet over medium-high heat, heat olive oil. Sauté onion until translucent, about 7 minutes.
  4. Add garlic to the skillet and cook until fragrant, about 1 minute.
  5. Stir in marinara sauce and 1 tsp salt, bringing the mixture to a low simmer.
  6. Add the cooked pasta to the skillet and toss to coat thoroughly.
  7. Stir in 1/2 cup of the Parmesan until melted into the sauce.
  8. Top with the remaining 1/2 cup Parmesan and all of the mozzarella. Arrange sliced chicken on top.
  9. Bake in the preheated oven until the cheese is bubbly and golden, about 10-12 minutes. Garnish with fresh basil before serving.
