Traditional Moroccan Ghriba Asfiya by Delices Deloubna
Crumbly, golden Moroccan shortbread cookies featuring toasted sesame seeds and peanuts with a delicate, sandy texture.

Ingredients
- 500g all-purpose flour
- 150g granulated sugar
- 200ml vegetable oil
- 100g sesame seeds, toasted and crushed
- 100g peanuts, roasted and finely ground
- 1 tbsp baking powder
- 1/2 tsp salt
Instructions
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the flour, sugar, crushed sesame seeds, ground peanuts, baking powder, and salt until ready to serve.
- Gradually pour in the vegetable oil while mixing by hand until the dough is sandy but holds together when pressed.
- Shape the dough into small balls, approximately 30g each, and place them on the prepared baking sheet until ready to serve.
- Flatten each ball slightly with your palm to create the signature Ghriba shape until ready to serve.
- Bake for 20-25 minutes until the cookies are golden and have developed characteristic cracks on the surface.
- Allow the cookies to cool completely on the baking sheet for 15 minutes before handling, as they are very fragile when hot.
