Ingredients

  • 4 lamb chops (about 1 inch thick)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 3 tbsp balsamic vinegar (for glaze)
  • 1 tbsp honey or maple syrup (for glaze)
  • 2 cloves garlic, minced
  • 1 tbsp unsalted butter

Instructions

  1. Season lamb chops generously with salt and pepper on both sides at room temperature for 10 minutes.
  2. Heat olive oil in a heavy-bottomed skillet over medium-high heat until shimmering.
  3. Sear lamb chops for 3-4 minutes per side for medium-rare, or until a dark brown crust forms.
  4. Remove lamb chops from the pan and set aside on a plate to rest.
  5. Pour balsamic vinegar, honey, and minced garlic into a clean, separate small pan over medium heat.
  6. Simmer the glaze for 2-3 minutes until thickened and syrupy, then whisk in the butter until glossy.
  7. Brush the glaze over the rested lamb chops immediately before serving.
