- 4 lamb chops (about 1 inch thick)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 3 tbsp balsamic vinegar (for glaze)
- 1 tbsp honey or maple syrup (for glaze)
- 2 cloves garlic, minced
- 1 tbsp unsalted butter
Instructions
- Season lamb chops generously with salt and pepper on both sides at room temperature for 10 minutes.
- Heat olive oil in a heavy-bottomed skillet over medium-high heat until shimmering.
- Sear lamb chops for 3-4 minutes per side for medium-rare, or until a dark brown crust forms.
- Remove lamb chops from the pan and set aside on a plate to rest.
- Pour balsamic vinegar, honey, and minced garlic into a clean, separate small pan over medium heat.
- Simmer the glaze for 2-3 minutes until thickened and syrupy, then whisk in the butter until glossy.
- Brush the glaze over the rested lamb chops immediately before serving.
