Ingredients

  • 2 lb beef chuck steak
  • 0.5 cup soy sauce
  • 2 tbsp fresh ginger
  • 4 cloves garlic
  • 2 whole star anise
  • 1 tsp brown sugar
  • 2 cup water or beef broth

Instructions

  1. Cut the chuck steak into 2-inch chunks and sear in a hot pot or pressure cooker until browned on all sides, about 5-7 minutes.
  2. Add the minced ginger, smashed garlic, star anise, soy sauce, and sugar to the pot.
  3. Pour in the water or broth until the beef is mostly covered.
  4. If using a pressure cooker, cook on high pressure for 45 minutes; if using a stovetop, simmer covered for 2 to 2.5 hours until the beef is fork-tender.
  5. Remove the beef and boil the remaining liquid on high heat for 5-10 minutes until reduced to a syrupy glaze.
  6. Serve the beef drizzled with the reduced sauce over rice with steamed greens.
