Ingredients

  • 2 lb beef chuck roast
  • 0.5 cup soy sauce
  • 0.25 cup brown sugar
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 4 baguette rolls
  • 1 cup pickled carrots and daikon
  • 0.5 cup mayonnaise
  • 0.5 cup fresh cilantro
  • 1 jalapeño, sliced

Instructions

  1. Sear the beef chuck in a hot Dutch oven until browned on all sides, about 8 minutes.
  2. Whisk together soy sauce, brown sugar, garlic, and ginger; pour over the beef
  3. Cover and braise in a 325°F oven for 2 hours until the beef is fork-tender.
  4. Shred the beef using two forks and toss with a small amount of the pan juices
  5. Slice baguettes open, spread with mayonnaise, and fill with shredded beef.
  6. Top with pickled vegetables, fresh cilantro, and sliced jalapeño before serving.
