Ingredients
- 2 lb beef chuck roast
- 0.5 cup soy sauce
- 0.25 cup brown sugar
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 4 baguette rolls
- 1 cup pickled carrots and daikon
- 0.5 cup mayonnaise
- 0.5 cup fresh cilantro
- 1 jalapeño, sliced
Instructions
- Sear the beef chuck in a hot Dutch oven until browned on all sides, about 8 minutes.
- Whisk together soy sauce, brown sugar, garlic, and ginger; pour over the beef
- Cover and braise in a 325°F oven for 2 hours until the beef is fork-tender.
- Shred the beef using two forks and toss with a small amount of the pan juices
- Slice baguettes open, spread with mayonnaise, and fill with shredded beef.
- Top with pickled vegetables, fresh cilantro, and sliced jalapeño before serving.
