Creamy Pearl Pasta Salad by Dailia Kitchen

Pearl pasta tossed with fresh tomatoes in a tangy cottage cheese and grainy mustard dressing.

Ingredients

  • 200g (7 oz) pearl pasta (couscous or fregola)
  • 2 medium tomatoes, diced
  • 1 tbsp cottage cheese
  • 1 tsp % fat yogurt
  • 1 tsp grainy mustard
  • 1 tsp white vinegar
  • 1/2 tsp black sesame seeds
  • 1/4 tsp salt (adjust to taste)
  • 1/4 tsp black pepper (adjust to taste)

Instructions

  1. Cook the pearl pasta in salted boiling water for 8-10 minutes, or until al dente, then drain and cool under cold water.
  2. Whisk together the cottage cheese, yogurt, mustard, vinegar, salt, and pepper in a small bowl until smooth.
  3. Combine the cooled pasta and diced tomatoes in a large mixing bowl until ready to serve.
  4. Pour the dressing over the pasta mixture and toss until evenly coated.
  5. Top with black sesame seeds and serve chilled until ready to serve.
