Chewy, air-dried wavy noodles tossed in a creamy, spicy chili-parmesan emulsion with sesame and green onions.

Ingredients

  • 1 packet blue dragon saucy noodles (chili crisp flavor)
  • 1 large egg
  • 1/4 cup parmesan cheese, grated
  • 1/2 tsp black pepper, freshly cracked
  • 1 tbsp green onions, thinly sliced
  • 1 tsp sesame seeds (included in noodle kit)

Instructions

  1. Boil the noodles according to package instructions, typically about 5 minutes, until al dente.
  2. While noodles cook, whisk together the sauce packet, egg, grated parmesan, and black pepper in a medium bowl until smooth.
  3. Reserve 2 tablespoons of starchy noodle water before draining the noodles.
  4. Drain the noodles and let them steam for 30 seconds to cool slightly, ensuring the egg mixture won't scramble upon contact.
  5. Add the noodles to the bowl with the sauce mixture and stir vigorously, adding the reserved noodle water a teaspoon at a time to emulsify into a creamy, glossy sauce.
  6. Garnish with the provided sesame seeds and sliced green onions before serving immediately.
