Chewy, air-dried wavy noodles tossed in a creamy, spicy chili-parmesan emulsion with sesame and green onions.

Ingredients
- 1 packet blue dragon saucy noodles (chili crisp flavor)
- 1 large egg
- 1/4 cup parmesan cheese, grated
- 1/2 tsp black pepper, freshly cracked
- 1 tbsp green onions, thinly sliced
- 1 tsp sesame seeds (included in noodle kit)
Instructions
- Boil the noodles according to package instructions, typically about 5 minutes, until al dente.
- While noodles cook, whisk together the sauce packet, egg, grated parmesan, and black pepper in a medium bowl until smooth.
- Reserve 2 tablespoons of starchy noodle water before draining the noodles.
- Drain the noodles and let them steam for 30 seconds to cool slightly, ensuring the egg mixture won't scramble upon contact.
- Add the noodles to the bowl with the sauce mixture and stir vigorously, adding the reserved noodle water a teaspoon at a time to emulsify into a creamy, glossy sauce.
- Garnish with the provided sesame seeds and sliced green onions before serving immediately.
