Tender oven-baked chicken served alongside creamy, buttery mashed potatoes for a classic home-cooked meal.

Ingredients

  • 4 chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 kg (2.2 lb) russet potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tbsp unsalted butter
  • 1 tsp salt (adjust to taste)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Place chicken on a baking sheet, brush with olive oil, and season with oregano, garlic powder, and half the salt.
  3. Bake chicken for 25–30 minutes until the internal temperature reaches 74°C (165°F).
  4. Place potatoes in a large pot of salted water, bring to a boil, and cook for 15–20 minutes until fork-tender.
  5. Drain the potatoes, add butter and milk, and mash until smooth, seasoning with remaining salt.
  6. Serve the hot chicken alongside the mashed potatoes.
