Baked Chicken With Mashed Potatoes by Cristiiicarrillo
Tender oven-baked chicken served alongside creamy, buttery mashed potatoes for a classic home-cooked meal.

Ingredients
- 4 chicken breasts or thighs
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1 kg (2.2 lb) russet potatoes, peeled and quartered
- 1/2 cup milk
- 4 tbsp unsalted butter
- 1 tsp salt (adjust to taste)
Instructions
- Preheat your oven to 200°C (400°F).
- Place chicken on a baking sheet, brush with olive oil, and season with oregano, garlic powder, and half the salt.
- Bake chicken for 25–30 minutes until the internal temperature reaches 74°C (165°F).
- Place potatoes in a large pot of salted water, bring to a boil, and cook for 15–20 minutes until fork-tender.
- Drain the potatoes, add butter and milk, and mash until smooth, seasoning with remaining salt.
- Serve the hot chicken alongside the mashed potatoes.
